THE PROCESS

Based In Santa Barbara

We work with several local fisherman who provide us with the highest quality Ike-Jime fish. This tremendously helps preserve the meat's texture, flavor, 

& shelf life.

Finest Ingredients

Our chefs utilize Organic produce for every event. In addition, we've developed  relationships with several elite wholesalers that source their products directly from Japan & other locations around the globe.

Seasonal Menus

In addition to our set menu tiers, we also offer seasonal courses that can be added on or used as a substitute.

THE CHEF | JULIAN ALEXANDER

I've now devoted over 14 years to learning the art of sushi. Passionate about this cuisine since the age of five, my journey has taken me through a spectrum of esteemed kitchens, each imparting its unique and authentic interpretation of traditional Japanese sushi.

 

My experience includes work at Michelin-starred establishments such as Jeune Et Jolie in Carlsbad, CA, renowned for their commitment to honoring the origins of seafood and blending diverse cultural flavor profiles. Drawing from these rigorous experiences, I've developed a refined and personal vision of sushi that honors its foundational principles while pushing boundaries with creativity.

 

But mastery of technique alone is not enough without help. I've come to recognize that exceptional sushi transcends the plate on which it is served. Ultimately, it's a dialogue between the chef, his ingredients, & the communities that nurture them. Collaborating closely with trusted fishermen who share my commitment to excellence and sustainability, I ensure that every element of your dining experience with us reflects integrity and care.

 

This holistic approach appeals to discerning diners who demand not just flawless execution but a meaningful, elevated experience. I humbly invite you to partake in a performance that seamlessly integrates tradition, innovation, & a profound respect for the provenance of every ingredient.

PREPARATION WITH A PURPOSE
 

We take great care in processing our ingredients for your event. We always do our best to utilize organic produce and wild seafood. Any farm raised fish used has been extensively researched in order to ensure that it's the best quality possible. Although we don't normally advise purchasing farm raised seafood, there are certainly a number of exceptions. 

 

For example, we use farm raised Ōra King Salmon from New Zealand. It's sustainably sourced from crystal clear glacial waters in The Marlborough Sounds of New Zealand's South Island. Although they're raised via aquaculture, the river valley is constantly supplied with some of the world's purest flowing water.

Live Santa Barbara Uni

 

We procure live uni from the local fishermen & delicately clean out the roe before your event.

Handpicked & Freshly Steamed

 

We source live Rock Crabs from the local fisherman and steam them ourselves. We never use imitation crab meat for of our menus.

Traditional Fish Storage

 

We mainly utilize handcrafted wooden cases which are traditionally used in japan to store fish before being served. The bottom is layered in ice.
